Ingredients

  • 4 chicken breasts or large fryer
  • 12 to 16 corn tortillas
  • 1 onion, chopped
  • 1 large bell pepper, chopped
  • 1/2 lb. Cheddar cheese, grated
  • 1 tsp. chili powder (optional)
  • garlic salt to taste (optional)
  • 1 can cream of chicken soup
  • 1/2 can Ro-Tel tomatoes with green chilies (I use whole can)

Directions

    Boil the fryer or breasts; debone and cut it to pieces.

    Soak tortillas a few seconds in chicken stock until wilty.

    Layer all ingredients in order listed.

    Bake in a 9 x 12-inch dish for 30 minutes at 375°.

    Yields 16 to 20 servings.
