  • 8 boneless chicken breasts, cooked and cubed
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can chicken broth
  • 1/2 can (8 oz.) Ro-Tel tomatoes
  • 1 large bag white corn tortillas
  • 1 onion, chopped
  • 1 to 2 c. grated Cheddar cheese

Directions

    Combine chicken, soups, broth and tomatoes.

    Spread 1/2 of this mixture in the bottom of a buttered casserole dish.

    Add 1/2 the bag of corn chips, 1/2 the onions and 1/2 of the cheese.

    Repeat with the other 1/2 of the chicken mixture, then the other half of corn chips, onions and cheese.

    Cook 15 to 20 minutes at 350°.
