  • 2 Tablespoons Butter
  • 1 whole Diced Bell Pepper
  • 1 whole Diced Medium Onion
  • 1 can (10.75 Oz. Can) Cream Of Chicken Soup
  • 1 can (10.75 Oz. Can) Cream Of Mushroom Soup
  • 2 cups Cubed Cooked Chicken
  • 1 can (10 Oz. Can) Rotel
  • 1 bag Tortilla Chips
  • 2 cups Shredded Cheddar Cheese

    Preheat the oven to 325 degrees.

    Soften the bell pepper and onion in butter.

    Add soups, chicken, and Rotel and heat through.

    Spray a 13x9 baking dish with cooking spray.

    Layer tortilla chips, soup mixture, and cheese.

    Repeat 2 more times to make a total of 3 layers.

    Bake for 40 minutes until warm and bubbly.

    Tortillas can be substituted for chips.

    If using chips, do not use thin chips as they tend to get soggy while baking.

    Different cream of soups can be substituted.

    I have used cream of celery and cream of potato, and it was still good!

    If you like things spicy, use 2 cans of Rotel, or use the hot variety.

    I use mild because my kids are not fans of spicy food.
