- 2 Tablespoons Butter
- 1 whole Diced Bell Pepper
- 1 whole Diced Medium Onion
- 1 can (10.75 Oz. Can) Cream Of Chicken Soup
- 1 can (10.75 Oz. Can) Cream Of Mushroom Soup
- 2 cups Cubed Cooked Chicken
- 1 can (10 Oz. Can) Rotel
- 1 bag Tortilla Chips
- 2 cups Shredded Cheddar Cheese
Directions

1Preheat the oven to 325 degrees.

2Soften the bell pepper and onion in butter.

3Add soups, chicken, and Rotel and heat through.

4Spray a 13x9 baking dish with cooking spray.

5Layer tortilla chips, soup mixture, and cheese.

6Repeat 2 more times to make a total of 3 layers.

7Bake for 40 minutes until warm and bubbly.

9Notes:

10Tortillas can be substituted for chips.

11If using chips, do not use thin chips as they tend to get soggy while baking.

12Different cream of soups can be substituted.

13I have used cream of celery and cream of potato, and it was still good!

14If you like things spicy, use 2 cans of Rotel, or use the hot variety.

15I use mild because my kids are not fans of spicy food.
