  • 1 c. raw rice
  • 1/2 c. red lentils
  • 1 c. cauliflowerets
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1/2-inch piece ginger, chopped
  • 1/2-inch piece green chili, cut
  • 1/2-inch piece cinnamon stick
  • 1 tsp. cumin seed
  • 1 tsp. mustard seed
  • 1/4 tsp. turmeric
  • butter and salt to taste
  • 2 c. water, plus

Directions

    Soak lentils for 1/2 hour.

    Fry mustard seed in some oil until they jump.

    Add cumin, chili, garlic, ginger, onion and cinnamon stick; cook for a few minutes.

    Add turmeric and cauliflower. Cook for 10 minutes.

    Add drained lentils and some butter; stir and add rice and water.

    Simmer, covered, until cooked. Additional water may need to be added.

    When almost done, add salt and cook a little longer.

    May add a tablespoon of lemon juice and some green coriander and sweetened coconut at the end.
