- 1/2 cup peeled and coarsely chopped kiwi
- 3 mint leaves
- 1/2 ounce Mint Syrup
- Ice
- 2 ounces light rum
- 1/2 ounce fresh lime juice
- 1 lime wheel
Directions

1In a mini food processor, puree the kiwi until smooth, then refrigerate until needed.

2In a cocktail shaker, muddle the mint leaves with the Mint Syrup.

3Fill the shaker with ice, then add the rum, lime juice and kiwi puree.

4Shake vigorously and strain into an ice-filled highball glass.

5Garnish with the lime wheel.
