- 3 garlic cloves, minced
- 1 aubergine, baked
- 480 g ground lamb, lean
- 12 teaspoon ground cinnamon
- 1 pinch ground cloves
- 12 tablespoon gingerroot, finely grated

- 2 large onions, cut into eights
- 480 ml stock
- 2 garlic cloves, minced
- 12 teaspoon ground turmeric
- 12 teaspoon ground cinnamon
- 2 teaspoons ground coriander
- 1 pinch cayenne pepper
- 3 tablespoons tomato paste

1Preheat the grill to its highest setting.

2In a large bow.

3l, combine the meatball ingredients (2 cloves garlic, minced, pulp from baked aubergine, ground lamb, 1/2 teaspoon cinnamon, pinch ground cloves, ginger, salt and coriander) Mix with your hands until thoroughly amalgamed.

18Simmer gently, stirring all the while, until the mixture is very thick (not at all soupy) Don't rush this step as it is esssential that the spices cook properly.

19Taste the mixture.

20The spices should not have a raw, harsh taste.

21Cook very gently for a few more minutes if necessary.

22Stir in the tomato paste and the remaining stock.

23Place the meatballs in this sauce.

24Simmer gently covered for 15-20 minutes until the sauce is very thick and rich.

25serve at once or cool and refrigerate until needed.

26This tastes good on the second or third day so do not hesitate to make in advance.

27Add more stock when reheating.
