- FOR THE APPLE MIXTURE:
- 2 whole Apples
- 1 Tablespoon Maple Syrup
- 1 Tablespoon Ground Cinnamon
- FOR THE CUPCAKES:
- 1/3 cups Softened Butter
- 1/4 cups Applesauce
- 1/4 cups Milk
- 1/4 cups Brown Sugar
- 2/3 cups Sugar
- 1/2 teaspoons Vanilla Extract
- 1-1/4 cup Whole Wheat Pastry Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Ground Cinnamon
- 1/4 teaspoons Ground Ginger
- 1/4 teaspoons Ground Nutmeg
- FOR THE FROSTING:
- 4 ounces, weight Cream Cheese
- 3 Tablespoons Softened Butter
- 1/2 teaspoons Vanilla Extract
- 2 cups Powdered Sugar

11. Preheat oven to 350°F.

22. For the apple mixture, place the apples in a pot and just cover with water. Cook on the stove until soft.

33. Drain the apples and let cool. Mash them with a potato masher, add in maple syrup and cinnamon, stir well.

44. In your mixing bowl, combine the apple mixture, butter, applesauce, milk, brown sugar, organic sugar, vanilla extract, and mix until creamy.

55. In a separate bowl, combine the flour, baking powder, soda, salt, cinnamon, ginger, and nutmeg. Whisk to combine.

77. Place the batter into a cupcake pan lined with paper linings and fill 2/3 full.

88. Bake in the oven for approximately 40 minutes. It takes longer to bake these cupcakes but it is so worth it. Bake until the center is done when a toothpick is inserted.
