  • 10 large potatoes
  • 1 medium onion
  • 5 slices bacon
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. hot milk or evaporated milk
  • 3 eggs

Directions

    Peel and grate potatoes and onion.

    Cut bacon into pieces and fry until crisp.

    Pour fat and bacon over potatoes.

    Add hot milk. Add beaten eggs, one at a time.

    Add salt and pepper.

    Pour into a greased 13 x 9-inch pan.

    Bake at 450° for 15 minutes.

    Reduce heat to 350°.

    Cook 1 hour.
