  • 6 egg yolks
  • 1 tbsp. sugar
  • 1 cup white vinegar
  • 1 cup dry white wine
  • 1 tbsp. butter
  • 1 tsp. mustard
  • 1 lemon, juice of
  • 1 cup cream
  • 1/2 salt
  • Cabbage
  • lettuce, shredded

    Beat the yolks well.

    Cook in a double boiler with vinegar or wine, sugar, butter, salt, and mustard, beating the whole time.

    When nearly done, add lemon juice.

    When thick, remove from the fire.

    Let it get cold, then mix in cream and stand in a cool place.

    Serve either on shredded cabbage or lettuce.
