- 1/2 cup milk , low fat
- 1 1/2 large eggs beaten
- 1 1/2 tablespoon canola oil
- 1 1/2 cup flour, all-purpose
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3/4 cup kumquat pureed
- 1/2 cup macadamia nuts chopped
- 1/2 cup sugar
Directions

1Combine the milk, egg and oil.

2In a separate bowl, mix dry ingredients together, apart from the nuts.

3Combine the mixed ingredients together.

4Fold in the kumquat puree and nuts.

5Bake for 45 minutes on 180 degrees celsius.

6Wait for it to cool, then slice and serve.

7If you want the extra tinge, squeeze a little bit of kumquat juice on the cake slice :]
