  • 1/2 cup milk , low fat
  • 1 1/2 large eggs beaten
  • 1 1/2 tablespoon canola oil
  • 1 1/2 cup flour, all-purpose
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 cup kumquat pureed
  • 1/2 cup macadamia nuts chopped
  • 1/2 cup sugar

Directions

    Combine the milk, egg and oil.

    In a separate bowl, mix dry ingredients together, apart from the nuts.

    Combine the mixed ingredients together.

    Fold in the kumquat puree and nuts.

    Bake for 45 minutes on 180 degrees celsius.

    Wait for it to cool, then slice and serve.

    If you want the extra tinge, squeeze a little bit of kumquat juice on the cake slice :]
