- 1 each onions chopped
- 6 each tomatoes chopped
- 1 cup black-eyed peas cooked
- 1 cup peanuts ground
- 1 x vegetable oil
- 1 x salt
Directions

1Heat the oil & cook the onion until it turns golden & transparent.

2Add the tomatoes & let them cook for 3 minutes.

3While they are cooking, roughly mash the peas with a fork.

4Transfer the peas to the pan containing the cooking onion & tomatoes.

5Cook them for 5 minutes.

6Stir from time to time.

7Spoon in the ground peanuts & mix well.

8Season & continue to cook gently for 10 minutes.

9Serve with rice.
