Lady Meat Balls

Ingredients

  • 1/2 c. cooked rice
  • 1 lb. ground turkey
  • 1/2 c. grated onion
  • 1/4 c. chopped fresh parsley
  • 1/2 c. grated Parmesan cheese
  • 5 Tbsp. extra virgin flavorful olive oil
  • 2 egg whites, beaten
  • 1/4 c. chopped fresh dill or 2 tsp. dried dill
  • 1/4 tsp. black pepper
  • 1/2 c. all-purpose flour

Directions

    Combine rice, meat, onion, parsley, cheese, 2 tablespoons of the olive oil, egg whites, dill and pepper in a bowl.

    Knead well and form into twenty egg shaped ovals.

    Roll ovals in flour.

    Heat remaining oil over medium heat in a large frying pan.

    Saute ovals for about 5 minutes, until brown on one side.

    Turn carefully and saute other side for 3 minutes or until brown.

    Remove and drain on paper towels.

    Keep in a covered casserole in a warm oven until ready to serve.

    If refrigerating to serve later, reheat in a covered casserole at 325° for 20 minutes, until warm.
