Lamb Chop Casserole

Ingredients
- 4 lamb chops
- 2 oz. long grain rice
- 1 packet or 1 tin tomato soup
- 1 medium onion
- 2 oz. fresh white breadcrumbs
- 2 oz. grated cheese
- pinch of thyme
Directions

1Prepare soup if using a packet.

2Wash rice and put in bottom of a large casserole dish.

3Brown chops, if desired, in frying pan and put on top of rice.

4Cover with chopped onion.

5Pour tomato soup over and sprinkle with thyme.

6Cover and bake for 1 hour at 350° (gas on 6).

7Remove lid, top with breadcrumbs and grated cheese; bake for a further 30 minutes until top is golden brown and bubbly.

8Serve with salad or green vegetables.
