- 8 loin lamb chops
- 2 Tbsp. olive oil
- 1 onion, chopped
- 2 Tbsp. flour
- 1 1/2 c. apple juice
- 2 1/2 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. instant chicken stock
- 1 tsp. mint (dried)
- 1 large apple
- 4 mint sprigs
Directions

1Trim lamb chops; brown on both sides in hot olive oil.

2Remove from skillet; pour off fat, leaving 3 tablespoons.

3Add onion; cook until transparent.

4Mix in flour, then apple juice, stirring constantly.

5When boiling, lower heat.

6Add soy sauce, sugar, chicken stock and mint.

7Return chops to skillet; cover and cook very gently for 30 minutes, or until lamb chops are tender.
