- 1 pound ground lamb
- 4 scallions finely sliced
- 1 large egg
- 2 tablespoons tomato sauce
- cooking oil spray
- tabbouleh to serve
- flatbread to serve
- hummus to serve
Directions

1Preheat oven to 350°F. Line a baking sheet with foil.

2Combine lamb, scallion, egg and tomato sauce in a mixing bowl. Season to taste. Form into walnut-sized balls and arrange on prepared tray. Spray with oil. Bake for 20-25 mins, turning occasionally, until golden brown and cooked through.

3Allow to cool. Store, chilled, in an airtight container. Serve warm or cool, with tabbouleh, flatbread and hummus.
