  • 1 3/4 lbs boneless lamb, cubed
  • 14 oz carrots, peeled and sliced
  • 1 None leek, trimmed, washed and sliced
  • 2 medium onions, sliced
  • 1 None bay leaf
  • 2 tsp mixed dried herbs
  • 1 2/3 lbs potatoes, peeled and thinly sliced
  • 1 1/4 cups vegetable stock, heated
  • 2 tbsp butter, melted
  • None None Chopped parsley, for garnish

Directions

    Preheat the oven to 400°F. Combine the lamb, carrots, leeks, onions, bay leaf and dried herbs in a 3-quart baking dish. Season with salt and pepper and mix well.

    Lay the potato slices on the stew mixture. Pour the hot stock over the top and drizzle with melted butter. Cover with foil.

    Bake for 1 1/2 hours. Remove foil. Adjust the oven setting from bake to broil. Broil for 10 mins to brown the potatoes. Serve with a sprinkle of parsley.
