Lamb Tagine With Dates

Ingredients

  • 1 tablespoon olive oil
  • 1 onion finely sliced
  • 2 1/4 pounds lamb cubed
  • 2 3/4 cups carrots chopped
  • 8 dates
  • 2 1/2 cups dried apricots
  • 1 tablespoon clear honey
  • 2 tablespoons parsley
  • 1 tablespoon tomato puree
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon ginger I prefer fresh grated ginger
  • 1 teaspoon turmeric freshly grated, I prefer fresh grated root turmeric - so superior to powdered! I buy 500g, grate it all in one go then freeze in tsp sizes
  • 2 cinnamon sticks
  • 2 teaspoons paprika

Directions

    Heat oil and cook onion. Add lamb, carrots and spices and cover with water. Bring to just under boil. You may wish to add a Knorr Lamb Cube.

    Add tomato puree, over and simmer for 1 hour 20 minutes.

    Add apricots and honey and any seasoning. Simmer uncovered for 20 minutes until thick and soupy.

    Add dates and simmer for a further 5 minutes. Scatter with parsley leaves and serve with couscous or quinoa
