  • 1 1/2 lb. potatoes
  • 1 1/2 lb. lamb shoulder or other cut
  • 1 large onion
  • 1 sliced carrot (optional)
  • 1/4 pt. stock or water
  • seasoning

Directions

    Slice potatoes.

    Arrange a layer on bottom of casserole dish. Cut meat into pieces (as for stew) and place over potatoes.

    Add sliced onion, carrot and stock.

    Add seasoning; cover with remainder of sliced potatoes.

    Cover and bake at 375° for 2 hours. Remove cover last 15 minutes to brown potatoes.
