Ingredients

  • 1 lb. hot sausage (turkey or beef), remove casing and crumble
  • 1 lb. sweet sausage (turkey or beef), remove casing and crumble
  • 1 lb. coarsely ground chuck steak
  • 1 1/2 onions, chopped
  • 3 cloves garlic, minced
  • 1/2 stalk celery, minced
  • 1 (16 oz.) can cooked tomatoes (whole peeled)
  • 1 can tomato paste (6 oz.)
  • 1 can tomato puree (8 oz.)
  • 1 Tbsp. oregano (Mexican)
  • 5 Tbsp. chili powder
  • 1 Tbsp. cumin powder (optional)
  • 1 tsp. Tabasco sauce
  • 1/2 can beer (6 oz.)
  • 1/2 tsp. salt
  • 2 bay leaves
  • 2 Tbsp. oil

Directions

    Brown sausage in oil.

    Remove and save.

    Add onions and garlic.

    Saute until tender.

    Return sausage to the pot and add tomatoes, paste, puree, celery and spices.

    Mix.

    Add beer and cook over low heat for 3 to 4 hours.

    Serve with red kidney beans.
