Lasagna Roll-Up

  • 8 curly edged lasagna
  • 1 (10 oz.) pkg. chopped spinach, thawed
  • 1 1/2 c. Ricotta cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1 egg, beaten
  • 1/4 c. grated Parmesan cheese
  • 8 slices ham (1 oz. each)
  • 1 (15 oz.) jar spaghetti sauce

Directions

    Cook lasagna in salted, boiling water until just tender. Drain.

    Place in cold water.

    Drain spinach well and mix with Ricotta cheese, salt, pepper, nutmeg, egg and Parmesan cheese. Drain noodles and pat dry with paper towels.

    Cut ham slices in half, lengthwise.

    Place on noodles.

    Spread each with spinach mix. Roll up noodles and place on sides in 9x13 inch baking dish.

    Pour spaghetti sauce over lasagna and bake at 350° for 35 to 40 minutes, or until done.
