Lasagna Roll-Ups

  • 12 lasagna noodles
  • 1 Tbsp. salad oil
  • 1 (10 oz.) pkg. frozen chopped broccoli, thawed and dried
  • 2 Tbsp. minced green onion
  • 15 oz. cottage cheese
  • 1 egg
  • 1/4 c. Parmesan cheese
  • 1/2 tsp. salt
  • 4 oz. shredded Mozzarella cheese (1 c.)
  • 14 oz. spaghetti sauce
  • 1/2 c. water

Directions

    Cook lasagna noodles as directed.

    In 2-quart saucepan over medium heat, cook broccoli and green onions in salad oil until tender (about 5 minutes), stirring frequently.

    Remove saucepan from heat.

    Stir in cottage cheese, Parmesan cheese, salt and egg. Preheat oven to 375°.

    Drain noodles and place in single layer on waxed paper.

    Evenly spread some cheese mixture on each lasagna noodle.

    Roll up each noodle jelly-roll fashion.
