- 1 tsp. canola oil
- 1 medium onion, chopped
- 1 can Italian tomatoes with liquid on
- 2 tsp. sugar
- 1 (6 oz.) tomato paste
- salt and pepper to taste
- 3/4 c. water
- 1/2 pkg. lasagna noodles
- 1 lb. low-fat Ricotta cheese or light
- 1 pkg. frozen spinach, cooked and drained
- pepper
- 2 Tbsp. Parmesan cheese
Directions

1Cook lasagna noodles, drain and cool.

2Mix low-fat Ricotta cheese or light, spinach, pepper and Parmesan cheese.

3Spray casserole with Pam.

4Spread spinach on noodles and roll up and cut in half.

5Put ruffled edges up and line in dish, then pour sauce over the noodles and bake, uncovered, 35 minutes at 350°.

6Makes 18 rolls.

7Serve with vegetable and salad.
