- 8 uncooked lasagna noodles
- 10 oz. pkg. frozen spinach, chopped and thawed
- 1 c. Parmesan cheese, grated
- 1 1/3 c. Ricotta cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground nutmeg
- your favorite spaghetti sauce recipe
Directions

1Cook noodles as directed on package.

2Rinse thoroughly with cold water and drain.

3Mix together spinach, 3/4 cup of the Parmesan cheese, Ricotta, salt, 1/4 teaspoon pepper and nutmeg. Spread 1/3 cup cheese mixture along entire length of each noodle, roll noodles up and stand on end in buttered 7 to 8-inch casserole at least 2 1/2 inches deep with a small amount of sauce.

4Pour sauce over noodles.

5Cover and refrigerate if made ahead.

6May be frozen also.

7Bake, covered, in 350°

8oven until rolls are heated through, about 30 minutes (50 to 60 minutes if cold).

9Remove from oven and sprinkle with remaining 1/4 cup Parmesan cheese.
