  • 12 spinach-flavoured lasagna noodles
  • 1 pkg. (454 g) ricotta cheese, regular or light
  • 1 pkg. (300 g) frozen chopped spinach, thawed and drained
  • 2 eggs
  • 1/2 cup chopped red pepper
  • 1/4 cup butter
  • 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1 clove garlic, minced
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 1/2 cup Kraft 100% Parmesan Grated Cheese, divided
  • 2 cups Cracker Barrel Shredded Part Skim Mozzarella Cheese

Directions

    Cook lasagna noodles according to package directions.

    Combine ricotta cheese, spinach, eggs, and red pepper.

    Season to taste.

    Melt butter in saucepan over medium heat; cook onion and garlic 2 to 3 minutes.

    Stir in flour, then milk.

    Cook and stir until bubbling and thickened.

    Stir in 1/2 of the Parmesan cheese.

    Pour 1/2 cup sauce over bottom of greased 13x9x2-inch baking pan.

    Top with 1 layer of 4 lasagna noodles, overlapping edges slightly.

    Layer with 1/2 spinach mixture, and 1/2 of the mozzarella cheese.

    Pour remaining sauce evenly over lasagna; sprinkle with remaining Parmesan cheese.

    Bake in 350F oven for 35 minutes.
