- 1 lb. flour
- 1/2 oz. salt
- 3 oz. butter
- 8 oz. water
- 1/2 oz. sugar
- pinch of cayenne pepper
- 1/4 oz. compressed yeast
Directions

1Mix all ingredients in mixing bowl with dough hook until all is incorporated.

2Place dough on floured sheet pan.

3Chill and rest dough at least 3 hours.

4The dough needs to be firm and cold to roll.

5Prepare garnish in pan.

6Cover dough with garnish.

7Roll floured dough until paper thin.

8Cut and place on dry sheet pan. Brush excess flour off and cut into desired serving size.

9Bake at 375° for 10 to 12 minutes or until crisp and golden brown.

10Best served warm with butter.
