Layered Avocado Dip

Ingredients

  • 1 (16 oz.) can refried beans (fat free)
  • 1 c. sour cream (low-fat or fat free)
  • 2/3 c. fat free mayonnaise
  • 1 pkg. taco seasoning
  • 2 ripe avocados
  • 2 tsp. lemon juice
  • 3 Tbsp. diced green onions
  • 1 diced tomato
  • 1 1/2 to 2 c. shredded Cheddar cheese
  • sliced black olives
  • tortilla chips

Directions

    Spread refried beans in a 10 x 6-inch Pyrex dish (with sides). Mix the sour cream, mayonnaise and taco seasoning together. Spread over beans.

    Blend avocados and lemon juice in food processor until smooth.

    Spread over mayonnaise layer the other ingredients in order (green onions, tomato, cheese and olives). Serve with tortilla chips.
