  • 1 (15 to 16 oz.) can kidney beans
  • 1 envelope dry taco mix
  • 1 c. sour cream
  • 1 c. salsa (mild or hot)
  • shredded lettuce
  • chopped tomatoes
  • sliced black olives
  • grated Cheddar cheese
  • 1 avocado (optional)

Directions

    Drain beans; reserve liquid.

    Mash or process beans and taco mix together.

    Add liquid, if necessary, for smooth, but not runny consistency.

    Spread mixture on round platter or 9 x 13-inch glass baking dish.

    If desired, mash avocado and mix with sour cream. Spread mixture or plain sour cream on beans.

    Spread salsa next. Top with lettuce, tomatoes, olives and cheese.

    Serve with tortilla chips.
