- 3 small zucchini, sliced
- 1 medium sweet onion, diced
- 2 tsp. melted butter
- 1 c. Cheddar cheese
- 3 medium ripe tomatoes, diced
- 3 bread slices, crumbled
- 2 tsp. Parmesan cheese
Directions

1Combine bread crumbs, butter and cheese.

2In a greased 1 1/2-quart casserole, layer half onion, tomato and zucchini; repeat.

3Sprinkle with salt, pepper and Cheddar cheese.

4Top with bread crumb mixture.

5Bake at 350° for 30 to 40 minutes or until tender.
