- 4 lb. potatoes, peeled and thinly sliced
- 2 (17 oz.) cans whole kernel corn, drained
- 1 c. chopped green peppers
- 2 c. large chopped onion
- 4 c. sliced carrots
- 3 lb. ground beef
- 1 (15 oz.) can tomato sauce
- 2 c. sharp American cheese, shredded
Directions

1Divide potatoes between two 12 x 7 1/2 x 2-inch baking dishes. Season with salt and pepper.

2Arrange corn and green pepper over potatoes in each casserole dish.

3Layer onion and carrot in each. Crumble the beef evenly over the vegetables.

4Sprinkle with more salt and pepper.

5Pat gently to smooth.

6Top each casserole with tomato sauce.

7Bake, covered, at 350° for 2 hours.

8Uncover; sprinkle with cheese.

9Let stand 10 to 15 minutes before serving. Serves 16 to 18.
