Leek Soup

Ingredients

  • 1/4 lb. bacon
  • 1 medium potato, cut into quarters and pared
  • 1 medium onion, cut into quarters
  • 4 leeks, washed well (use only white part)
  • 2 cans chicken broth
  • 1/4 tsp. pepper
  • pinch of nutmeg
  • 1 c. milk
  • 1 Tbsp. chives (optional)
  • salt to taste

Directions

    Cook bacon and remove from pan.

    Add onion, leeks and potato to bacon grease.

    Cook for 1 minute. Add chicken broth, pepper and nutmeg.

    Let simmer for 45 minutes until potato is soft.

    Put into blender and puree (put in a little at a time).

    Put mixture back in pot. Add milk.

    Cook on low until hot (do not boil).
