Leek Soup

  • 4 slices bacon
  • 4 to 5 potatoes
  • 2 leeks, diced
  • 5 chicken bouillon cubes
  • 5 c. water
  • 2 egg yolks
  • 1 c. sour cream
  • 1 onion, diced

Directions

    Dice and fry 4 slices of bacon until brown.

    Leave bacon and grease in pan and add 2-inch diced onion and 2 diced leeks. Saute 5 minutes.

    Take off heat and add 2 tablespoons flour and stir. Add 5 cups hot water with dissolved bouillon cube in each cup. Add 4 to 5 medium potatoes, diced.

    Cook until potatoes are cooked.

    Add sour cream with egg yolks beaten in with fork.

    Add this mixture to soup, but first slowly add soup by the tablespoon to sour cream and yolks to prevent curdling.

    Then add to soup. Garnish with parsley.
