- 4 slices bacon, coarsely chopped
- 6 leeks, thinly sliced
- 1/4 c. flour
- 4 c. water
- 3 chicken flavored bouillon cubes
- 2 potatoes, peeled and cubed
- 1 tsp. dried basil
- 1 c. milk
Directions

1Cook bacon in a Dutch oven over medium heat 5 minutes.

2Add leeks.

3Saute 5 minutes.

4Reduce heat to low; add flour, stirring until smooth.

5Cook 1 minute, stirring constantly.

6Gradually add water; cook over medium heat, stirring constantly until thickened. Add bouillon cubes, potatoes and basil.

7Cover and simmer 45 minutes.

8Stir in milk and cook until thoroughly heated.

9Yield: 7 cups.
