  • 2 c. mashed potatoes
  • 1/2 tsp. salt
  • 1 Tbsp. shortening
  • 1/2 c. flour
  • 1 trout
  • 8 strips bacon
  • 1/2 c. oleo
  • 1 lemon
  • 1/2 c. flour
  • 1/4 c. Romano cheese, grated
  • 2 Tbsp. parsley
  • 1 Tbsp. salt
  • onion powder
  • pepper to taste

Directions

    Clean and wash trout.

    Remove heat and tail, if desired.

    Line a large sheet pan with foil, leaving enough foil to wrap fish in. Place about 1/2 cup of oleo on foil.

    Mix remaining ingredients. Roll fish in the mixture and lay on the foil.

    Place bacon over fish with lemon slices.

    Roll foil, completely covering fish. Bake at 350° for 1 1/2 hours.
