Ingredients

  • 2 or 3 medium potatoes (fresh or leftover baked)
  • 1 c. or more corn
  • 1 large onion (optional)
  • 1 to 2 c. leftover ham, diced
  • 1 c. or more fresh or cooked peas
  • milk
  • salt

Directions

    Using a deep casserole dish, slice half the potatoes and layer on the bottom.

    Layer corn over them, including juice if any.

    Add a layer of diced onion, then a layer of ham, followed by a layer of peas.

    Finish by layering remaining potatoes on top.

    Add enough milk (with salt stirred in) to barely come to top of vegetables. If you wish, you can first thicken milk with a little flour (1 tablespoon) before adding.
