- 3 1/8 cups milk

Directions

1Melt the butter in a saucepan on medium heat. Add the flour and stir well.

2Add the milk slowly and simmer on low heat until thickened. Add a pinch each of nutmeg, salt, and black pepper.

3Dice the cooked meat and add to the sauce. Mix well.

4Cover the mixture and chill overnight.

5Remove the mixture from the refrigerator, form a croquette, coat in egg and breadcrumbs, and deep fry in vegetable oil.
