Directions

    Melt the butter in a saucepan on medium heat. Add the flour and stir well.

    Add the milk slowly and simmer on low heat until thickened. Add a pinch each of nutmeg, salt, and black pepper.

    Dice the cooked meat and add to the sauce. Mix well.

    Cover the mixture and chill overnight.

    Remove the mixture from the refrigerator, form a croquette, coat in egg and breadcrumbs, and deep fry in vegetable oil.
