Ingredients: 2 c. sifted flour; 1 1/2 c. sugar; 3 tsp. baking powder; 1 tsp. salt; 1/2 c. cooking oil; 7 unbeaten egg yolks; 3/4 c. pineapple juice; 2 tsp. grated lemon rind; 2 tsp. vanilla; 1/2 c. well-drained crushed pineapple; 1 c. egg whites (7 or 8); 1/2 tsp. cream of tartar

1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. cooking oil
7 unbeaten egg yolks
3/4 c. pineapple juice
2 tsp. grated lemon rind
2 tsp. vanilla
1/2 c. well-drained crushed pineapple
1 c. egg whites (7 or 8)
1/2 tsp. cream of tartar

Beat until whites form very stiff peaks.

Mix about 1 cup of the egg white mixture into the flour mixture to lighten.

Pour egg yolk mixture gradually over whipped egg whites, gently folding with rubber spatula just until blended.
