- 2 c. sifted flour
- 1 1/2 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1/2 c. cooking oil
- 7 unbeaten egg yolks
- 3/4 c. pineapple juice
- 2 tsp. grated lemon rind
- 2 tsp. vanilla
- 1/2 c. well-drained crushed pineapple
- 1 c. egg whites (7 or 8)
- 1/2 tsp. cream of tartar
Directions

1Beat until whites form very stiff peaks.

2Mix about 1 cup of the egg white mixture into the flour mixture to lighten.

3Pour egg yolk mixture gradually over whipped egg whites, gently folding with rubber spatula just until blended.

4Do not stir.
