- 2 1/2 tbsp butter
- 2 None lemons, zested and juiced
- 2/3 cup whole milk
- 2 None eggs
- 4 tbsp all-purpose flour
- 1 cup granulated sugar
- 1/2 cup shredded coconut
- 1 tsp baking powder
Directions

1Preheat oven to 350°F. Grease 4 - 8.5 oz ramekins.

2Melt butter. Remove from heat and stir in lemon juice and lemon zest. Whisk together milk and eggs. In a separate bowl, combine flour, sugar, coconut and baking powder. Add lemon butter and milk mixture to dry ingredients and beat until smooth. Distribute between prepared ramekins and bake for 20-25 mins.
