- 1 1/2 lb. large shrimp, in shell
- 2 cloves garlic
- 1 scallion
- 1 lemon
- 1 Tbsp. butter
- 2 Tbsp. olive oil
- salt
- 2 Tbsp. chopped fresh parsley
Directions

1Peel and devein the shrimp.

2Mince the garlic and chop the scallion.

3Squeeze 2 tablespoons of juice from the lemon.

4Heat the butter and oil in a large frying pan over medium heat.

5Add the shrimp, garlic and 1 teaspoon salt.

6Saute, stirring, until the shrimp turns pink, 3 to 4 minutes.

7Stir in the lemon juice and scallion.

8Sprinkle with parsley and serve with rice or noodles.
