  • FOR THE CRUST:
  • 2 sticks Unsalted Butter, Softened
  • 1/2 cups Powdered Sugar
  • 1/4 teaspoons Salt
  • 2 cups All-purpose Flour
  • FOR THE FILLING:
  • 4 Large Eggs
  • 2 cups Sugar
  • 1/4 cups All-purpose Flour
  • 1/4 teaspoons Salt
  • 1/2 cups Fresh Lemon Juice
  • 1 Whole Lemon, Zested
  • 1/2 cups Powdered Sugar, For Dusting

Directions

    Preheat oven to 350°F. Lightly grease a 9x13 class baking dish.

    In a large bowl, mix together all of the crust ingredients until combined. Press evenly into the glass baking dish. Bake for 15 minutes.

    Meanwhile, for the filling, whisk together the eggs and sugar. Whisk in the remaining filling ingredients until smooth. Pour over baked crust and bake for another 25-30 minutes or until the edges are set and golden brown. Remember: it's better to over-bake than to under-bake these. Let cool completely (set in fridge to speed up this process) then dust with powdered sugar and slice into bars.
