- 1 cup Unsalted Butter
- 1/2 cups Powdered Sugar
- 2 cups All-purpose Flour
- 1/2 teaspoons Salt
- 4 whole Eggs, Well Beaten
- 2 cups Granulated Sugar
- 5 Tablespoons Fresh Lemon Juice
- 2 Tablespoons Lemon, Rind
- Powdered Sugar, For Topping

1Preheat oven to 300 degrees.

2In a large bowl, cream together butter and powdered sugar; then blend in flour and salt. Press mixture in a buttered 9x13 pan. Bake for 20 minutes.

3While crust is baking, in a medium bowl, blend together eggs, granulated sugar, lemon juice and rind. Pour over crust.

4Raise oven temperature to 350 degrees and bake for an additional 15 to 20 minutes. Remove from the oven and let cool. When cooled, sprinkle with powdered sugar. Cut into rectangles.
