  • 1-1/2 cups flour, divided
  • 1-1/4 cups sugar, divided
  • 1/3 cup margarine or butter, softened
  • 1 cup cholesterol-free egg product
  • 1/2 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
  • 1 Tbsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09

Directions

    Blend 1 cup flour and 1/4 cup sugar; cut in margarine or butter until mixture resembles coarse crumbs.

    Press mixture on bottom of 9x9x2-inch baking pan.

    Bake at 350F for 15 minutes or until lightly browned.

    Blend egg substitute, lemon juice, lemon peel and remaining flour and sugar; pour over pastry crust.

    Bake 15 to 18 minutes more or until set.

    Cool slightly; sprinkle with powdered sugar if desired.

    Cool completely; cut into 2x1-inch bars.
