- 1-1/2 cups flour, divided
- 1-1/4 cups sugar, divided
- 1/3 cup margarine or butter, softened
- 1 cup cholesterol-free egg product

Directions

1Blend 1 cup flour and 1/4 cup sugar; cut in margarine or butter until mixture resembles coarse crumbs.

2Press mixture on bottom of 9x9x2-inch baking pan.

3Bake at 350F for 15 minutes or until lightly browned.

4Blend egg substitute, lemon juice, lemon peel and remaining flour and sugar; pour over pastry crust.

5Bake 15 to 18 minutes more or until set.

6Cool slightly; sprinkle with powdered sugar if desired.

7Cool completely; cut into 2x1-inch bars.
