- 12 cup confectioners' sugar
- 1 12 cups flour
- 12 teaspoon salt
- 34 cup butter, cut in small pieces
- 4 eggs
- 1 12 cups granulated sugar
- 1 grated lemon, rind of
- 12 cup fresh lemon juice
- 34 cup whipping cream
- confectioners' sugar, for dusting
Directions

1Preheat oven to 325F.

2Grease a 13x9-inch baking pan.

3Sift the sugar, flour, and salt into a bowl.

4With a pastry blender, cut in the butter until mixture resembles coarse crumbs.

5Press the mixture into the bottom of the prepared pan.

6Bake until golden brown, about 20 minutes.

7Meanwhile, for the topping, whisk the eggs and sugar together until blended.

8Add the lemon rind and juice and mix well.

9lightly whip the cream and fold into the egg mixture.

10Pour over warm crust, return to the oven, and bake until set, about 40 minutes.

11Cool COMPLETELY before cutting into bars.

12Dust with confectioners sugar.
