Ingredients
- 1 can evaporated milk
- 1 pkg. lemon flavored gelatin
- 1 1/4 c. boiling water
- 1/3 c. honey
- 1/8 tsp. salt
- 3 Tbsp. lemon juice or more if desired
- grated rind of 1 to 2 lemons
- 2 1/2 c. vanilla wafer crumbs
Directions

1Thoroughly chill can of milk in refrigerator overnight. Dissolve gelatin in boiling water.

2Add honey, salt, lemon juice and rind.

3Refrigerate.

4When it has congealed slightly, beat milk until stiff and whip gelatin mixture into it.

5Spread half of crumbs into a large pan (10 x 13-inch or equivalent) and pour lemon mixture over it.

6Top with remaining crumbs.

7Chill for approximately 3 hours.

8May be served plain or with whipped cream.
