- 1 can evaporated milk (13 oz.)
- 1 pkg. lemon flavored gelatin
- 1 1/4 c. boiling water
- 1/3 c. honey
- 1/8 tsp. salt
- 3 Tbsp. lemon juice
- 1 grated lemon rind
- 2 1/2 c. vanilla wafer crumbs
Directions

1Thoroughly chill can of milk in crushed ice or in refrigerator overnight.

2Dissolve gelatin in boiling water.

3Add salt, honey, lemon juice and lemon rind.

4When it has congealed slightly, beat milk until it is stiff and whip gelatin mixture into it.

5Spread half of the crumbs on large pan (10 x 13 1/2-inch).

6Pour lemon mix over it and top with remaining crumbs.

7Set in refrigerator to chill (approximately 3 hours).
