- 1 can evaporated milk, chilled
- 1/3 c. sugar
- 3 Tbsp. lemon juice
- 2 1/2 c. vanilla wafer crumbs
- 1 (3 oz.) pkg. lemon jello
- 1/8 tsp. salt
- grated rind of 1 lemon
Directions

1Dissolve gelatin in 1 1/4 cups boiling water.

2Add salt, sugar, lemon juice and rind.

3When slightly thickened, beat in the whipped milk.

4Put half of the crumbs in the bottom of the pan or dish (8 x 8-inch).

5Pour in mixture and put rest of the crumbs on top.

6Put in refrigerator to set.

7Keeps several days.
