Lemon Blender Cookies

- 1 lemon
- 6 Tbsp. water
- 1/2 c. shortening
- 1 egg
- 1 pkg. (about 19 oz.) yellow cake mix
Directions

1Trim a thin slice from both ends of unpeeled lemon; cut in half lengthwise.

2With a shallow V shaped cut, remove white center core. Cut halves in small chunks.

3In electric blender, puree lemon chunks with water.

4Add shortening and egg; blend until smooth.

5In large bowl, combine cake mix and lemon mixture; mix well.

6Drop batter from teaspoon on lightly greased cookie sheets.

7Bake at 350° for 13 to 15 minutes.

8Makes about 5 dozen cookies.
