Lemon-Blueberry Muffins

- 1 egg
- 2 c. variety baking mix
- 1/4 c. sugar
- 2 Tbsp. vegetable oil
- 1 (6 oz.) container lemon-flavored yogurt
- 3/4 c. fresh or frozen blueberries
Directions

1Heat oven to 400°.

2Grease bottom of 12 muffin cups or line with paper baking cups.

3Beat eggs slightly in a medium bowl with a fork.

4Mix in baking mix, sugar, vegetable oil and yogurt just until moistened (batter should be lumpy).

5Gently fold blueberries into batter and fill muffin cups 2/3 full.

6Bake 15 to 18 minutes, or until golden brown.

7Carefully remove muffins from pan right away.

8Cool on wire rack.
