- 1 egg
- 3/4 c. milk
- 1/4 c. cooking oil
- 2 tsp. finely grated lemon peel
- 1 Tbsp. lemon juice
- 1 3/4 c. all-purpose flour
- 3/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
Directions

1In a mixing bowl, beat together the egg, milk, oil, lemon peel and lemon juice.

2Stir together flour, sugar, baking powder and 1/2 teaspoon salt.

3Add egg mixture to this; stir until moistened. Pour into 2 greased 6 x 3 x 2-inch loaf pans.

4Bake in 350° oven for 40 to 45 minutes or until bread tests done.

5Cool in pans for 10 minutes.

6Remove from pans onto a wire rack; cool.

7Wrap and store overnight.

8Makes 2 small loaves.
