  • 1 lb. softened margarine
  • 6 eggs
  • 5 c. sifted flour
  • 1 tsp. soda, dissolved in 1 Tbsp. boiling water
  • 2 c. raisins
  • 2 c. sugar
  • 3 oz. bottle lemon extract or use 1 oz. and add 2 oz. water
  • 1 c. chopped pecans

Directions

    Cream sugar and butter.

    Add eggs one at a time and beat well after each.

    Add lemon extract and flour, one cup at a time.

    Add soda, nuts and raisins.

    Bake at 250° for 1 hour and 15 minutes. Makes 2 loaf pans, greased and floured.
