- 1 1/2 c. flour
- 1 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. (1 stick) butter, melted
- 1/2 c. milk
- 2 eggs
- 1 tsp. grated lemon peel plus 1 tsp. lemon extract
Directions

1Grease a loaf pan.

2Preheat oven to 350°.

3In a large bowl combine flour ingredients.

4Mix butter, milk, eggs, lemon peel and lemon extract until smooth.

5Add this to flour mix.

6Stir just until flour is moistened.

7Pour into pan.

8Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean.

9Cool in pan 10 minutes.

10Remove from pan and cool completely.

11Makes 1 loaf.
